Egg rolls are generally shredded cabbage and carrots, maybe mushrooms, plus shrimp or pork (or nothing), rolled up in a thin dough that's tucked in on the ends and deep-fried. They're often served with "duck sauce", which is generally corn syrup + yellow food dye.
The egg rolls have no eggs in them and the duck sauce has no duck in it.
I can't really explain that.
They're common in Chinese restaurants. The two times I've been in China I never had them.
They're usually quite plump. There's a smaller version called a "spring roll", which is normally more crispy and slender.
A nicer version of the concept is the "fresh spring roll", often served with Vietnamese or Cambodian cuisine; it's veggies and a protein wrapped in a rice paper wrapper (which is a rice flour pancake, very light) and served with a fish sauce or peanut dipping sauce. The fish sauce can be vegeterian (it's not my fault that this makes no more sense than the duck sauce and egg roll bits). And it's not deep-fried.

Oooh. I think spring rolls are more popular over here, then. I like them, but it definitely depends on what's in them. Does vegetarian fish sauce taste like fish? |

I've never had the vegetarian version of fish sauce. The weird thing for me is that I really hate seafood and I really like fish sauce. It's really salty and has a very deep rich savory flavor, but oceany, not beefy. I imagine the vegetarian version of it is still very salty. |

It depends. There was a place in the town I grew up that had incredible egg rolls. It's gone now, unfortunately. I find most egg rolls very oily and heavy so I don't care for them. In Asia, there are no egg rolls. Spring rolls, yes...but they are different. I prefer either Vietnamese prawn roll (which is not deep fried) or Thai spring rolls (which are also not fried). |

Depends on the egg roll. the cheap commercial made ones suck but the ones actually made by hand in restaurants and at home are good.... Also need dipping sauce.. |

For a few years I preferred spring rolls, but I've gone back to egg rolls and haven't looked back. I rarely get spring rolls now. |

Story time
So, I was eating Chinese with my friend and her family. Her dad had snagged some packets of asian mustard of which I had never had before..I normally love mustard so I figured I'd give it a shot. He told me it was spicy but I didn't think it'd be terribly spicy. So I put it on my eggroll thinking it wouldn't be too bad. Boy was I wrong. My eyes started to water and my nose started to run..that stuff was strong. I let out a "Woo! That's really spicy!" (That was said amidst all my tears)..And what do I do? I put more on..Needless to say, I don't eat eggrolls with that mustard anymore..I am now even more respectful of how they taste plain.
End story.
So I write like a 3 year old now..This is good to know. |

ha-ha I think many have done this. My first time my eyes about popped out of my head, and I do believe I put more on, maybe to quicken the painful death or something. |
