DADA because that's what Snape enjoys teaching and I * love * Snape.
Potions. Kind of like cooking, and I enjoy cooking.
Astromony.
Care of Magical Creates. Would be nice being outside whole day and some magical creatures are truly fascinating.

Well, since I worked as an RN for some years I might be the matron in the hospital wing. I love history so that is another possibility.

It is spelled Arithmancy on the Wikipedia article so if I spelled it wrong so did they.

Since I already majored and received my doctorate in these studies they would be the logical courses for me to teach. Makes sense to me!

Arithmancy, Charms, Runes, Potions, Herbology, Divination, Astronomy, Defense. More or less, these are things I do in fact teach on occasion.
