I like to add carrots to my chili... I picked it up from a vegetarian. I still add meat too, though. I'll often serve it with rice. A few times, I've done the chili with a cornbread layer baked on top of it. It's a little tricky to do that just right, plus I'm not the biggest corn bread fan, but it's fun once in a while. The main ingredients of my chili are: onions, ground beef, tomato puree(can), pinto beans, carrots, and chili powder. Then, I'll usually do some variation. I've been getting into adding a can of whole tomatoes to recipes like this (I cut them up coarsely a little first, but it's nice to have some big tomato chunks in there). Also, using something other than ground beef (like a stew beef or even pork) can be good. Sometimes, I'll add some sort of hot sauce of hot pepper powder as well, depends what I'm in the mood for (also, depends on what the wife is in the mood for). I haven't done ketchup, vinegar. I've probably crumbled crackers, though not recently (I grew up doing that with tomato soup - my dad does it to the extreme). I will do crackers on the side, basically with any soup-like dish. I don't do cheese that often on chili. |

I like mine hot, spicy, with beans, with onions, Sometimes cheese but didn't check it. I also like a splash of cider or balsamic vinegar in it. My crackers are always on the side for putting spoonfuls on. |

I sometimes serve mine over rice too. I also like chunked tomatos in mine. Jalepenos are a big addition to mine, I can't believe I left that option out. I'll have to try the carrots in there next time. I love carrots and it sounds pretty good. I'll have fresh home grown ones this summer too. I'm not a big cornbread fan either but that might give me some other ideas later.

You have to give the carrots an hour or two to soften (that's probably obvious, but it's worth saying -- I put them in right near the start, then let everything simmer for a while, hours). Jalepenos are a good idea, they are not too hot and they have some good flavor too. |

I like the way you answered this. Your not real picky are you? I have used all kinds of meat in mine too. I have used alligator a crapload of times, as I know a guy in south La. that farm raises them. I get a good deal on it. I also help him sometimes when I'm there release a certain percentage back into the wild. This isn't exotic but pulled pork is great in chili. That might be the way I do it next as I have a ton of pork. |

 You've got me pegged, Randy. I'm not very picky when it comes to food... and with something like chili that can be made so many ways, it doesn't make sense to be picky... you could miss out on some great food. That's cool you have a source for a different kind of meat... keeps things interesting. Wish you lived closer so I could hang at your house! |

Actually, Llama, originally chili was/is made without beans. When you see 'Chili con carne' on labels of chili, the 'con carne' part means 'with beans'. Someone I know found this out the hard way when he went to Mexico and ordered chili at a restaurant. When he didn't find any beans, he asked the waiter, and the waiter said, "Sorry, senor, I didn't know you want chili con carne!"

I have access to a lot of different meats. Another one is Buffalo. There is a guy I know back up in the city that raises them. I'm friends with a lot of hunters that I get meat from too. I hunt but mostly just dear these days. |

yes it is....crazy!! i grew up in the west and when i moved to midwest, this was one of the craziest things, i thought. now i am an addict!! but, i don't put the noodles in the pot...they get mushy if you do this. put noodles in bottom of eating bowl and then add chili. |

Mild, with beans and I like the crackers crumbled in. I put so many crackers in that the chili resembles porridge more than chili. If I don't have enough crackers to make chili porridge, then I like to spoon chili onto each cracker and eat it that way. I'll need a large glass of whole or chocolate milk too. |
