| Zang | posted 14-Mar-2002 3:45pm Uncle Zang's Delicious Giblet Gravy -Put all the giblets in a pot, cover them with water, put on a lid and bring to a boil. Turn down and let simmer while the turkey cooks. -Just before the turkey is done, pull the giblets out of the broth and let cool. Retain the broth. De-bone the neck and discard the bones. Chop up all the meat into tiny tiny pieces. -Take the turkey out of the roaster, set aside. Place the roaster on the stove on high heat. Add the chopped giblets to the turkey drippings, sirring rapidly (with a French whisk) and scrapping up any turkey bits that stuck to the roaster. -Gradually add the broth. Continue stirring vigorously while it reduces. Add the water from the brussel sprouts, the potatoes, whatever... -Keep stirring while it reduces to the preferred consistency. |
