| heyzeus1 | (reply to daver) posted 17-Jun-2001 5:22pm i've got some great recipes if you want to trade. my last and best was a very simple and cheap raspberry honey wheat with tettnanger and hallertaur hops. i put the fruit and honey in at the end so as not to impart to much flavor, but to get rid of the wheat bitterness. it's great. but i also made an irish ale a while back with 16 pounds of dark grains and barley and 4 oz fuggles hops for a five gallon batch...and, um, i can't even take a sip. it's like vodka beer- yech! i'll email you some recipes if you like, i've made a very good nut brown, and an excellent pale ale. you can also go here : http://brewery.org/brewery/gambmug/gambmub/shtml or http://brewery.org/brewery/cm3/CatsMeow3.html i like scottish ale very much too, that may be next on my list to make. (but the honey wheat is so good, i'll have to make more of that first, i didn't even have a recipe for it, i just went to the store and randomley bought stuff and it turned out perfect) |

Fuggles is my favorite hop though: I've got 10 bines of it growing like mad out back (along with some more sedate EKG). I've used Cat's Meow and Gambrinus' Mug recipes before with generally good luck. Now I find I tend to stare at what grains I have and wait for inspiration to strike. The result is usually drinkable. I highly recommend ProMash. I was forever scribbling a recipe on a scrap of paper and by the time I'd decide that I wanted more of that beer, I'd have lost the paper. Now it all goes into the computer. |

Then I had a bunch of friends over for Midsummer who finished off my raspberry cider so now it's time to brew again. Good luck with the wheat. I was never able to get more than a 5-10 degree drop using the towel and fan method, I think because it was too humid to get good evaporation. |

Some yeasts produce that sort of flavor at lower temperatures and it's a normal component of some beer styles. It's certainly not the end of the world (or the beer) although some beer snobs might sneer. Which yeast are you using? |
