These are the lemon squares of the gods. ] Lizzie's Lemon Squares Bottom layer: 2 cups flour 1 cup butter, softened 1/2 cup confectioners sugar (Lizzie recommendations: Let the butter get nice and soft. Sift the flour and sugar together so you don't get lumps. You can melt the butter too, which does change the consistency of the pastry, but it is still yummy) Mix and pat into the bottom of a 13"x9" pan. Bake for 20-25 minutes at 350 degrees. Top layer: 2 cups sugar 4 eggs 1 tablespoon flour 1 teaspoon baking powder 4 tablespoons lemon juice (Lizzie recommendations: Buy fresh lemons and squeeze the juice yourself. It's worth it! A longer mixing time means a thicker sugary crust on top. Experiement to see what you like!) Mix together and pour over cooked bottom layer when it comes out of the oven. Bake 30 minutes at 350 degrees. Remove from oven, and run a knife around the edge to loosen up the darker brown bits. Wait 5 minutes, then cut, remove from pan and cool on wire racks. Wait any longer and you'll never pry the edge pieces out of the pan (it doesn't matter if your pan is "non-stick" either). | The Survey Central Cookbook |
