I sometimes serve mine over rice too. I also like chunked tomatos in mine. Jalepenos are a big addition to mine, I can't believe I left that option out. I'll have to try the carrots in there next time. I love carrots and it sounds pretty good. I'll have fresh home grown ones this summer too. I'm not a big cornbread fan either but that might give me some other ideas later.
